Roasted Plantains,Choose ripe plaintains for this dish. If you have green ones, allow them to ripen until they look like overripe bananas with black marks.,This is the first time I made plantains. This was a very simple recipe, so I gave it a try. WOW, they are delicious!! I put them, while still warm, on top of vanilla ice cream. Fantastic!!,I skipped the sugar and added a wee bit of nutmeg. I covered the dish for the first twenty minutes, and then uncovered it for the last ten.
