Roasted Radishes,I was struggling for side dishes while in the “strict” phase of low carbing it….figured most veggies seem to mellow with roasting why not radishes…..only problem was DS kept eating them so I had to hide them in a container labeled “squash” (he would NEVER open that! LOL). I also put them out as part of an appitizer buffett on a platter with cauliflower that I cooked the same way….they disappeared!,4 stars only because 2 teaspoons of salt is way too much. cut salt to 1 teaspoon and olive oil to 2 tablespoon.,No one in our family cares for radishes. When we got a bunch in our farm share box I wasn’t sure what to do with them. I saw this recipe and figured I’d give it a try. Well, I’m happy to say my family will now eat radishes IF I make them like this.
