Ingredients

Adjust Servings:
16 ounces potato chips (kettle chips, original flavor. i usually use 1/2 the bag.)
6 ounces blue cheese, crumbles (to taste, i usually use about 3-4 oz.)
1/4 cup green onion top, chopped
1 - 2 roma tomato, diced
1/2 cup blue cheese dressing (good quality. i usually use about 1/3 to 1/2 of the jar.)

    This recipe really suprised me with how good it was! I have not made, but was lucky enough to have the chef herself serve this during the holidays and I'll definitely be making this sometime myself. I like blue cheese, but DH isn't so much a fan, but we both agreed that the ingredients are really nicely balanced. Between the crunch of the kettle chip (who doesn't like kettle chips?!), the creamy tang of the cheese and the pop of the green onions and tomato, it really hit the spot. It seems really simple to make too and like you could really play around with different types of cheeses and creamy dressings as well. Thanks for FINALLY posting RockChalk (go KU!).

    Rockchalkchick’s Blue Cheese Nachos, Are you tired of boring old nachos? Want to kick up your wine & cheese party a notch or two? Then give these nachos a try!
