Spinach & Roquefort Salad,This french inspired salad utilizes blue cheese, thinly sliced apples, and sunflower seeds to perk up a traditional spinach salad. Artisanal cheese works best here as well as a tart apple. Recipe from Vegetarian Times.,Delicious. I made as directed. For my preference, I would have maybe dressed each salad separately. It was a little more dressing than I care for, but it was still wonderful flavor. Thanks for posting.,Can’t say anything that hasn’t already been said LOL This is a total winner – we had it on two days in a row, and I could eat it again right now! The second time used fresh apricots in place of the apples, and it was great, too. The vinaigrette alone is a dream.
