Directions
Rotel Spanish Rice,Family Spanish rice recipe with Rotel and bacon. Don’t leave out the bacon fat and butter, it adds a lot of the flavor to the dish. Use Hot Rotel if you like it really spicy.,We love this recipe! We make it as described though we often dont do the bacon and just use left over bacon fat. We have also done varieties where we add Black beans and corn. My kids LOVE it. It is always so tasty! We have even used as a base for a chicken taco casserole and a burrito casserole that had this rice as a base. I highly suggest!

Fry Bacon in Skillet Until Browned. |

Remove from Skillet, Crumble, and Set Aside. |

Do not Remove Bacon Grease from Skillet! |

Melt Butter in Skillet and Add Onion, Pepper and Garlic. |

Add the Rotel, Green Chiles and Chicken Broth and Simmer Approximately 5-10 Minutes. |
