1 (28 ounce) can stewed tomatoes
salt and pepper
1 garlic clove, minced (or to taste)
1 teaspoon cumin
1 teaspoon extra hot chili powder (or to taste)
12 corn tortillas
1 1/2 cups grated cheddar cheese

    This is really great..Seldom I find a recipe I totally love but this one is it! The changes I made were..(1) For sure add corn (2)used a packet or 1/2 of taco seasoning mix. (did not use spices listed.) (3) and used half can of chili beans. This is worth a try. Glad I tried it.

    Brown Hamburger, Adding 1 Cup Chopped Onion, and 1 Cup Chopped Green Pepper as the Meat Browns. Add 1 Large Can Chili Beans (without Meat), 1 Large Can Stewed Tomatoes and Season to Taste With Salt, Pepper, Garlic, Cumin, and Extra Hot Chili Powder, If Desired. Layer Meat and Bean Mixture in Casserole With 1 Package of Corn Tortillas. Top With Grated Cheese. Bake in 350* Oven For 20-30 Minutes. Variations: Add Canned or Left Over Corn, Chopped Olives to Make It a Mock Tamale Pie.
