SAGANAKI ( greek fried cheese), It just melts in your mouth!, A truly great treat! Local Greek restauranteur used to present this as a FREE appetizer to guests on special occasions like proposals known to be in a young man’s plans at the end of a dinner (for which he also provided the champagne) or for birthdays being celebrated by regular patrons at his establishment! His personal wow that embellished the presentation was to prepare the saganaki as described here and take to the table after a splash of cognac was ignited! An extraordinarily fine restaurantur, showman, & gentleman! Thanks for the memories, Mr Colias we miss you, Nick, also the famiy, and Dickadee’s Front Porch Hope retirement has been very good to you , I have made this several times and it tastes exactly the same as the saganaki served in Greek restaurants This last time I made this I made the mistake of slicing the cheese too thick – so it wasn’t completely warmed through and in our opinion it wasn’t as good It is great to serve this with bread to sop up all that goodness in the pan Thanks for posting Poppy
