Salmon Souffle, This is an old stand-by in our house. It is so simple to make and everyone loves it. The glorious end result makes you look like a cooking star. I found the recipe years ago in my SIL’s Harrowsmith cookbook., used to make this a lot the first few years I was married. It was my fancy dish. That was the early 90s. used tuna instead of salmon back then because tuna was cheaper. I lost my recipe and found this recently. So glad I did. My husband and I love this., Was neither very light nor did it rise much Yes 11ozs of flaked baked salmon and very fresh eggs but possibly allowed the flour really 3 tbsp? butter and milk to boil and thicken a tad too much Thoughts

Melt Butter in Small Sauce Pan. |
