Santa Fe Chicken With Saffron Rice, This is an easy and delicious recipe The saffron rice really makes it special It is also a very healthy meal , Sooooo yummy!! However, instead of leaving the chicken whole after cooking, I shredded the chicken and mixed it with the other ingredients before baking I also poured the drippings that were left in the pan with the rice and other ingredients It turned out GREAT!!!, I made this for dinner last night and it was fantastic! The only changes I made was to cut the chicken into bite sized pieces, used fire roasted diced tomatoes, garlice powder instead of fresh, (i forgot, and just mixed the powder in with the rice and tomaotes) and added a little emril’s seasoning We all loved it including my 4 year old who can be picky at times Thanks for posting!
