Savory Potato Pancakes

    I made these for dinner last night. First time ever attempting potato pancakes. Wow! Very good. used extra onion cuz I love onion and I found that the Cuisinart I was given for Christmas is perfect for grating them (I shredded them first, removed them from the bowl, inserted the standard blade, returned them to the bowl, and pulsed a few times for the perfect consistency). One reviewer recommended a pinch each of coriander and nutmeg. I didn't have coriander, which I will remedy soon, but I did put in a pinch of nutmeg. It definitely added something and next time, I will use a bit more. I fried them in olive oil and they tasted great!!

    Mix All Ingredients and Drop by Tablespoonsful Onto Well Greased Griddle or Skillet.
