Savory Potato Pancakes

Features:
    Cuisine:

I made these for dinner last night. First time ever attempting potato pancakes. Wow! Very good. used extra onion cuz I love onion and I found that the Cuisinart I was given for Christmas is perfect for grating them (I shredded them first, removed them from the bowl, inserted the standard blade, returned them to the bowl, and pulsed a few times for the perfect consistency). One reviewer recommended a pinch each of coriander and nutmeg. I didn't have coriander, which I will remedy soon, but I did put in a pinch of nutmeg. It definitely added something and next time, I will use a bit more. I fried them in olive oil and they tasted great!!

Savory Potato Pancakes,This recipe is from Mrs. Rudolph Hellwege and Mrs. Otto Hemmann, from the cookbook “Heritage of Cooking” A Collection of Recipes from East Perry County, Missouri. To find out more about this cookbook read the description from the first recipe I posted from it Recipe #38782,I made these for dinner last night. First time ever attempting potato pancakes. Wow! It definitely added something and next time, I will use a bit more. I fried them in olive oil and they tasted great!!,Delicious and easy. Because I was only cooking for myself, I made it even easier by using frozen shredded hash browns that I thawed in the microwave. Also, since I didn’t want to cut into a whole onion for only a couple tablespoons, used onion powder. Next time I make them I think I’ll cut down on the flour slightly and up the amount of onion powder.
