2 medium baking apples, peeled and chopped

1 tablespoon dark brown sugar

1 teaspoon fresh ground black pepper
1 tablespoon rubbed sage
3 round pie crusts (purchased or own recipe for 3 pie crusts)
2 egg yolks
2 tablespoons water

    Saute the Onion and Sausage in the Butter in a Skillet For 10 Minutes or Until Browned.

    Add the Potatoes and Apples. Sprinkle With the Flour. Cook For 2 Minutes Longer.

    Stir in the Brown Sugar, Salt, Pepper and Sage; Remove from Heat.

    Roll Out the Pastry to a 1/8-Inch Thickness (or Use Pre-Made Pie Pastry). Cut Into 2 1/2 Inch Circles.

    Place a Heaping Teaspoon of the Sausage Mixture on One Side of the Circle. Moisten the Edge With Water; Fold Into a Semicircle, Pressing the Edge to Seal. Brush the Surface With a Mixture of the Egg Yolks and Water. Place on Ungreased Baking Sheets.

    Bake at 350 Degrees For 20 to 25 Minutes or Until Golden Brown. Serve Warm.
