Wilted spinach salad,I served this terrific salad to guests and it was a hit! Pour the hot dressing over the salad right before serving time. I found this recipe in an old Farm Journal cookbook. Cook time is for the time it takes to boil the eggs and fry the bacon.,used brown sugar instead of white, apple cider vinegar, 4 strips of bacon instead of 5, and 4 hard boiled eggs. used 1/4 of a medium red onion and sauted it in the bacon grease before making the dressing, as raw onions are hard on my stomach. used 12 oz of fresh harvested spinach from my organic gardening neighbor. The salad was delicious and my other half, who doesn’t normally like sweet dressing gobbled it down. We had it with grilled burgers, but honestly, it would have been a meal by itself.,used monkfruit sweetner instead of sugar and saved 144 calories. This salad is simple and amazing. A southern classic.

Combine Spinach, Onions and Eggs in a Large Salad Bowl. |

Cook Bacon in Skillet Until Crispy; Remove Bacon and Drain on Paper Towels. |

Pour Off All but 3 Tablespoons of Bacon Drippings. |

Add Vinegar, Water, Sugar, Salt and Pepper to Bacon Drippings, Heat to Boiling, Stirring to Blend. |
