Directions
Tofu Spinach Pie, very easy and light quiche I have been making for years! I have recently begun using 2 bags of baby spinach and have wilted it in the saute pan on top of the sauteed onions I have also added broccoli or fresh sugar snap peas along with the spinach Serve with a salad and crusty bread for a nice light meal , This was so good I only used 1 Tbsp of oil, omitted the butter altogether, used cheddar instead of parmesan (we were out of parm) and tastewise, you couldn’t tell there was tofu in this Definitely will be making this again, probably with some sundried tomatoes , so good – used a deep dish pie crust and silk tofu- steamed 2 bags of spinach, sauted the onions in a small amount of oil – omitted the dill weed and parsley and margarine because i didn’t have them – added 1 can of corn – baked about 5 extra minutes to brown the crust a little – this is a keeper, and i’ll definitely be making it again
