Savory Spinach & Broccoli Quiche, I make this recipe all the time for brunch My family absolutely loves it! It’s savory and simple to make Notes: I like to use the Cabot brand extra sharp cheddar Cabot Cheddar can be purchased at the specialty cheese section in most grocery stores You can also buy it at Whole Foods & Trader Joes , I reviewed this, but it didn’t work So here I am again, saying that we really liked this recipe used pepper jack cheese instead of Monterrey jack Every thing else was the same as the recipe used fresh spinach and not frozen , Today I woke up to a rainy morning and I was putting my egg recipes in order when I suddenly began to crave quiche I had some fresh baby spinach (a little over half a 12 oz bag I steamed and squeezed dry, chopped) and broccoli so this recipe fit the bill perfectly I only had 4 eggs so I added about 3/4 Cup silken Tofu to the eggs mid way thru the mixing to ensure I got enough air in the eggs first I’m thinking that it will come out nice and add some extra protein to the quiche as well! I also didn’t have Monterey Jack so used shredded Mozzarella The Verdict: Fluffy and perfectly tasty quiche that satisfied my craving Also super stoked it turned out nicely because this was my first attempt at quiche

Preheat Oven to 350f. |

Steam Chopped Broccoli Until Tender and Set Aside. |

Melt Butter in Saute Pan and Add Onion and Garlic. Add Salt and Pepper Then Set Aside. |

Beat Eggs Into a Large Mixing Bowl. Add the Onion & Garlic Mixture, Then Cheese, Broccoli and Spinach. Mix Well With Spoon. |

Pour Mixture Into a 9 Inch Pie Dish With Prepared Pie Crust and Bake in Oven For 35 Minute |

Notes: Use a Toothpick to Check the Middle of Quiche After the Set Time. If It Comes Out Wet, Bake For Another 3-5 Minute. |
