Zucchini, Mushroom, and Fresh Tomato Sauce over Pasta, Marie Simmons, This turned out great! I doubled the veggies and added a little cubed eggplant that I needed to use up. We loved it! Thanks for sharing the recipe., I made this for dinner tonight and it was very well received. Changes I made were to use chilli infused oil, and I added a couple of fresh chillis to the garlic. I also added some pasta water to the “sauce” mix and a little butter to the cooked pasta. Thanks for a tasty recipe!
