Scalloped Potatoes,Here’s a great scalloped potato recipe that’s so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.,I made this for Easter dinner and it was a hit with everyone. You can’t really go wrong with this recipe – it’s yummy cheesy delicious potatoes that paired perfectly with the Easter ham. I doubled the recipe in a 9 x 13 casserole dish and I did saute a small onion in the butter when making the cheese mix, as others had suggested, and an extra dash of cayenne. I don’t know that it made much of a difference, the recipe is good as-is. used pre-shredded cheddar and used the food processor to cut up the potatoes quickly. I also cooked at 325 so I could cook along-side the ham, covered it with tinfoil for the first hour, and then removed the tinfoil, and it took about 2 hours total for the potatoes to full cook through.,The only thing that I add is a grated onion or finely diced onion. Love the flavor that it gives.
