    I made a half-recipe for my family of 2. It made 4 dinner-sized servings. I added 1 cup of peas, and served asparagus along side. Delicious! This is an easy recipe that could be prepped the night before, and have a kid put it in the oven after school, and have dinner ready for the family later. It takes 1 1/2 hours to cook, so it's not a quick dinner for after you get home.

    Melt Butter in Large Sauce Pan Over Low Heat; Blend in Flour, Salt, and Pepper.

    Cook, Stirring Constantly, For About 1 Minute. Remove from Heat Gradually Stir in Milk.

    Return to Heat; Cook Until Thickened and Bubbly.

    Fold in Ham, Onion, Green Pepper and Cheese. Pour Over Potatoes in a Large Bowl.
