Scottys Nest Eggs

    I found this in the Best of Bridge too. Christmas morning, I typically made Wife Saver, but dh confessed it wasn't his favourite, so I surprised him with Scotty's Nest Eggs, which I had never made before. DH was THRILLED! He loves these! He liked them so much, he was thrilled when I presented them to him on NY morning too!It has taken me a couple tries to perfect these in terms of done-ness of the yolk for our taste because use two eggs. I don't use a muffin tin. I first used a ramekin style crock and they took too long - I overcooked them and the yolks were like hard boiled. The next time, I made using a small au gratin and that works perfectly, but I still need to cut the time. It seems for me, that about 20-22 minutes in a mini au gratin works for us for a softer yolk and that also cooks the entire white.The recipe is perfect as is, but ovens do vary, so watch the eggs for how you like them. I have also used milk instead of half n' half. Serve on buttered english muffins or crumpets and you can even go so far as to put a bit of hollandaise on them for an egg's benedict type of breakfast. Don't hesitate to try these. They are really good and something very different.

    Preheat Oven to 350.

    Grease Large Muffin Tins With Pam. Rip/Shred the Ham to Fit Around the Muffin Tin, Making Sure the Bottom and Sides Are Covered. Break Egg Over Top of Ham. Add Cream and Sprinkle With Cheese and Basil. (can Be Done Ahead of Time) Bake 12 - 15 Minutes. (place Water in Any Unused Muffin Cups to Prevent Damage).
