Steps

Done

Bring Ham Hock and Water to Boil in a Stockpot. Cover and Lower to Medium Heat and Simmer For 30 Minutes.

Add Split Peas and Continue to Simmer For 30 Minutes. Stirring Occasionally.

Remove Ham Hock. Add Onions Stirring Occasionally.

Remove Meat from Hock and Put Hock Back Into the Soup. Dice Ham Meat and Return to Soup With Carrots and Celery. Simmer For Another 30 Minutes.

Remove Hock and Add Liquid Smoke. use Woodmans Hickory. Stir and Let Simmer Uncovered For Another 30 Minutes. Remember a Little Goes a Long Way!

Turn Soup Off While You Make Up Some Biscuits. the Soup Will Thicken as It Cools and the Flavours Will Intensify as It Lowers to Serving Temperature.
