Seared Salmon Cakes, Another recipe from my mother’s collection. Good for children who don’t really like fish. Goes well with rice., I have made these for years. But instead of crackers I stir in 2 Tb flour, shape into patties, dredge in flour and fry in hot oil until brown. I usually serve with fries and baked beans. I love the salmon patties cold! – My late night snack., My stepmother used to make the most salmon cakes but I hated her too much to ask for the recipe. These came out very close, although used breadcrumbs vs. crackers and I think it made them too dry. Will def try again with crackers in the future because they were just fine with a yogurt/mayo/dill sauce. The flavor was very good and so easy to make. Thanks!
