Simmered Chinese Chicken,This is a super easy to make “all in one-pot” dinner. The flavors are wonderful. The recipe calls for a whole chicken but I have also made it with boneless breasts and thighs.,Thanks Mom of Pvt. Amy for a delicious all in one pan chicken. I did not have a lot of chicken pieces so I halved the recipe. I made the mistake of adding some chunks of red potatoes along with the chicken. That explains why the sauce disappeared. I even added a half a cup of water to the pan and scraped up the bits which left me with a bit of sauce. Next time I will cook potatoes or any veggies separately. AND I will double the sauce. Also I did not have apple juice so used pineapple juice. Let me say, it was so delish with the sauce caramelizing onto the chicken, giving it a sweet sticky bbq flavor without an outdoor grill !! The chicken cooked in about 1/2 hour. Definitely making this again with lots more sauce which was soooooo tasty! You guys have to try this. It is really finger lickin good !!,I needed something simple and quick, this fit the bill perfectly. Even more importantly, the entire family loved it. Definitely a keeper! Thanks for the recipe, Pvt Amys Mom
