    Preheat Oven to 350 Degrees.

    Grease Casserole Dish (big Enough to Hold All Ingredients Mixed, Casserole Will Rise).

    Pan Fry Diced Potatoes in Skillet With Extra Virgin Olive Oil.

    If Using Sausage Brown in Skillet.

    Mix Cooked Potatoes, Sausage, and Eggs in Bowl.

    Add Salt If You Would Like (i Always Use Salt).

    Pour Mixture Into Greased Casserole Dish.

    Sprinkle Remaining Cheese on Top.

    Bake in Oven For 35 Minutes. (for Half the Recipe Cut All Ingredients in Half and Bake at 350 For 25 Minutes).
