Simplicity Chocolate Cake, A quick, easy and extremely good chocolate cake My mother often baked this cake for the jackaroos (cowboys) when she was a cook on the cattle stations (ranch) in outback Australia Be careful not to overcook this cake and it will stay moist and fresh for days ENJOY use this recipe on a regular basis , very good simple chocolate cake I made it the first time exactly as it is written, baking at 350 for 35 minutes It was a little too sweet and not rich enough for my taste I made it a second time, but non-dairy, substituting coconut milk for regular milk and using only 3/4 cup sugar and doubling the unsweetened cocoa powder It came out much better I am making it a third time next week using 2/3 cup of sugar and 4 tbsp cocoa powder and i think it will be perfect! It is especially good if you do not use frosting but instead just sift some confectioners sugar on top!
