Bake Potatoes Until Slightly Under Cooked. Approximately 30 Minutes Depending on What Type of Potato You Use. Then Cool. You Can Do a Day Ahead of Time and Put Potato in Fridge.

Slice in to Inch Pieces and Place on a Baking Dish or Aluminum Foil If Doing on the Grill.

Drizzle Olive Oil Over Potatoto.

Add Shrimp, Scallions, Tomatoes and Feta and Grill Until Heated Through. (10-15 Minutes Tops) Remove from Heat.
