My first attempt at Thai food used bone-in skinless thighs which turned out nice and moist I thickened the sauce at the end with a corn starch slurry Perhaps I thickened it a little too much used medium salsa Wish used hot I put a few hot peppers from my garden in the pot but they lost a lot of their heat during the day I served it with cilantro-lime-rice #157068 and thai-zucchini #19012 Altogether a great meal that I hope to put in the regular rotation
