Southwestern Quinoa Vegetable Casserole,This is a pretty good healthy and easy to prepare dish,This is sooooo good and quite easy! I doubled the recipe and it fit in a 9×13 casserole dish just fine. used habanero ro-tel tomatoes and a little extra jalapeos and it turned out a nice spice level for me (we like more spicy things). I rinsed and drained the black beans, not sure if I was supposed to do that or not, but the consistency ended up good.,How long does this last? I made it without the cheese last Sunday. Think its still good a week later?
