Village Whiskey’s Spicy Pecans, Named for Chef Jose Garces’ newest Philadelphia venture, these pecans are lovely with a drink Use the hot sauce of your choice–I like Crystal or Sriracha–and make it as hot as you like–I prefer just a hint of a burn Time does not include cooling time , We found these to be absolutely decadently flavored with all sherry, sugar, salt and hot sauce I left the water out of the mix all together, not to have to drain out any flavors with excess liquid There was still enough liquid to add another 8 oz of nuts Any dripping liquid I just added on roasting pan with nuts, it all evaporated and the flavors were left on nuts I ended up roasting them longer as well These nuts certainly had plenty excuisite flavor

Preheat the Oven to 350 and Line a Baking Sheet With Parchment Paper or Silpat. |

in a Saucepan, Bring the Sherry, Sugar, Salt, Water and Hot Sauce to a Simmer. in a Bowl, Whip the Egg Whites Until Foamy. |

Place the Pecans in a Medium Bowl and Add the Sherry Mixture; Toss to Coat Thoroughly. Fold in the Egg Whites and Drain Off Any Excess Liquid. |

Spread the Pecans on the Prepared Baking Sheet and Roast Until Golden Brown, About 3 to 5 Minutes. |
