Tangy Sweet and Sour Pork Delight: A Flavorful Journey

Ingredients

Adjust Servings:
oil for deep fat frying
2 lbs pork tenderloin (amount depends on the number of people you are feeding. this also freezes well.)
1/2 cup flour
1/4 cup cornstarch
1/2 cup cold water
1/2 teaspoon salt
1 egg
1 (20 ounce) can pineapple chunks (drain but keep the syrup)
1 cup brown sugar
1 cup white vinegar
1 teaspoon salt
4 teaspoons soy sauce
4 carrots sliced thin
1 garlic clove finely chopped
2 tablespoons cornstarch

Tangy Sweet and Sour Pork Delight: A Flavorful Journey

    I made this tonight, but tweaked it quite a bit. First, because I already had bottled sweet and sour sauce, used that rather than the one with this recipe. I also wanted more veggies, so I cut into bite sized chunks: red & green bell peppers; a half an onion; a stalk of celery with "strings" removed; and, the carrots and pineapple. I followed the recipe to a T for batter and pork fry, but before the pork went into the fryer, I did a very quick fry on the veggies and set them aside. I put some chicken broth in a pot and dumped all the veggies and pineapple into the broth to keep them hot but not over cook them. I fixed some jasmine rice as suggested. I heated the bottled sauce and when all of the separate components were done, served it all together with a ramekin of sauce for dipping. It was a big hit. The veggies were crisp-tender. The pork was crisp on the outside and tender and juicy inside. Thanks for the recipe. I'll try your sauce next time.

    Add Enough Water to Drained Pineapple Juice to Measure 1 Cup.

    Heat the Syrup, Brown Sugar, Vinegar, 1/2 T Salt, Soy Sauce, Carrots and Garlic to Boiling in Dutch Oven.

    Cover and Reduce Heat Until Carrots Are Crisp Tender.

    in the Meantime, Trim Fat from Pork and Cut Into Large Pieces.

    Heat Oil to 360f.

    Blend Flour, 1/4 C Cornstarch, 1/2 C Cold Water, 1/2 T Salt and Egg in Large Bowl Til Smooth.

    Add Pork and Stir to Coat Well.

    Fry Pork Pieces, Don't Crowd in Pan, About 5 Minutes Turning Frequently Until Browned.

    Drain on Paper Towel and Keep Warm.

    Mix 2 T Cornstarch and 2 T Water and Mix Til Smooth.

    When the Carrots Are Done, Increase the Heat on the Sauce and Stir in the Cornstarch and Water, Stirring Constantly.

    When Thickened, Add the Pork, Pineapple Chunks and Green Pepper.

    Continue to Stir 1 Minute or Until Warmed Through.
