Yellow Coconut Rice (Tanzania), Posted for Zaar World Tour 2006 This is an African rice recipe If you want, you can add 1/2 cup grated coconut to give it a stronger coconut flavor , I just made this rice, using half the salt, no butter and original-flavored rice milk instead of milk, since I can’t have diary used full-fat coconut milk I put in the optional cardamom The rice milk has a certain sweetness to it, so it’s perfect for me since I prefer my coconut sweet than salty
I liked the result very much, except for the fact that I didn’t have basmati rice on hand It would’ve been perfect that way

In Saucepan Add Coconut Milk, and Milk. Bring to Boil. |

Add Rice, Salt, Turmeric, Cinnamon, Cloves, and Cardamom (if Using). |

Cover and Cook Until Liquid Is Absorbed, About 20 Minutes. |

Add 2 Tablespoons Butter. |
