Ultimate Homemade Butter Cookie Delight

    Excellent recipe! I needed something quick and tasty to bring to a friends house and decided to try these. I didnt have the time to leave the dough in the fridge at all, so I ended up carefully rolling it out on a large piece of lightly floured parchment paper and cutting them into 2 rounds. They spread just enough to be the perfect size and, geez, were they delicious. Completely agree with the other reviewers: incorporating the correct amount of ingredients is key. used my trusty digital scale to measure everything except the vanilla and salt - eg 240g of all purpose flour. Cant recommend highly enough adding a food scale to your trove of kitchen tools. Its very inexpensive and youll never again need to wonder if youre putting in too much flour. This probably goes without saying but, if possible, use a high quality butter like Kerry Gold or similar (ie pure and without the added water). The extra rich creaminess is completely worth it.

    Beat the Butter, Sugar, Salt and Vanilla Together Until Smooth and Creamy.

    Mix in the Egg Yolk Until Well Incorporated, Scraping Down the Sides of the Bowl at Least Once.

    Add the Flour and Mix Just Until Incorporated.

    Scrape Onto a Lightly Floured Board and Knead a Few Times, Just Until the Dough Smooths Out.

    Turn Onto a Sheet of Plastic Wrap and Roll Into a Log, Wrap Up and Refrigerate For Several Hours or Freeze.

    Before Baking, Preheat the Oven to 325f.

    Line Your Baking Sheets With Parchment.

    Slice the Dough Into Slices About 1/8" Thick and Place Them on the Sheets About an Inch Apart (they Won't Be Spreading Very Much, but They Need Air Room Around Each Cookie).

    Bake Until Just Beginning to Turn Golden Around the Edges, About 16-18 Minutes.
