    These muffins were delicious! Ive made 3 batches in the last 2 days and my husband just asked if i could make more. I ran out of vegetable oil for my 2nd batch but did have coconut oil so I substituted that and they were even better than the vegetable oil ones were.

    The Best Peach Nectarine Muffins,After making muffins this way I will never use a different recipe. You can use whatever fruit you want. I’ve made them with mangoes and blueberries, peaches & blackberries as well as the peaches and nectarines.,These muffins were delicious! Ive made 3 batches in the last 2 days and my husband just asked if i could make more. I ran out of vegetable oil for my 2nd batch but did have coconut oil so I substituted that and they were even better than the vegetable oil ones were.,I really liked these muffins. I made these last night. I have a white nectarine tree and we have an abundant crop this year, so I’ve been trying various recipes in order to use them up. I didn’t have any peaches, so just used fresh, ripe, sweet, juicy white nectarines chopped up with skins on. I made a couple of tweaks based on other’s reviews. I doubled the recipe and got 22 muffins (my quality control was lacking as some muffins were larger than others). Since I doubled the recipe I felt I had some leeway for substitutions in what used. used 1/3 C. applesauce and 1/3 C. oil instead of 2/3 oil, to cut down on the oil. I added a 1/2 tsp each of cinnamon, almond extract and vanilla extract (a little bit of almond goes a long way), maybe could have used a bit more cinnamon, but I didn’t want to overpower the nectarines. used 1/3 C. buttermilk and 1/3 C. 2% milk, because that’s what I had. And I guessed on the amount of nectarines (as mine are on the small side) and it could have used just a bit more. But all in all, they came out great. Everyone loved them! I did sprinkle some brown sugar on top, but it doesn’t really need it. While the nectarines last, I’m making more!!

    Grease 8 Muffin Cups or Use Paper Liners.

    in a Large Bowl Combine Flour, White Sugar, Salt, and Baking Powder.
