To Die For Zucchini And Tomatoes !!!!,OK this is sooooooooo Good. I could eat this 3 times a night and not get sick of it. Zesty and spicy and very tasty.The tomatoes really add to the flavor,I add a good tablespoon of tomato pesto or a few finely chopped sun dried tomatoes just to add a deeper flavor. And if you have fresh jalapeos, like I do each summer, I add a small deseeded one to the sauce.,This was a favorite as a kid, and many years later, it still is. I saute in a little olive oil. The addition of parmesan cheese is a nice touch. To me this is the ideal vegetable dish–easy, so attractive and tasty. I also like other reviewers’ helpful suggestions–over pasta or additional sausage sound yummy.
