Tequila and Lime Sweet Potatoes, I’m posting this per a request of a friend I have not tried it yet but have every intention of doing so This is a very unique dish and can also be finished on a gas or charcoal grill My broiling time is only approximate so keep a close eye on these potatoes under the broiler! The original recipe came from a local promotional cookbook out of Mobile, Alabama , These were very tasty little morsels I served them as a side to jerk chicken and grilled them It was the perfect side dish, caramelizing a bit from the honey with a nice tang from the lime juice and tequilla Thank you Bone Man for sharing the recipe , This *is* an awesome sweet potato recipe, I oven-broiled the sweet potatoes, simply wonderful! thanks so much for sharing this and all of your wonderful recipes Bones! Cut the Potatoes Into 3/4" Thick Slices. |

in a Large Saucepan, Bring the Water to a Boil and Then Add the Potatoes -- When They Begin to Re-Boil, Allow Them to Go For 6 Minutes, Uncovered, (they Should Be Just Tender) and Then Drain Them With a Colander. |

Mix the Lime Juice, Honey and Tequila Together in a Small Bowl. |

Set Up a Large Baking Sheet on Which There Is a Metal Grill-Type Rack. Lay the Potatoes Out on the Rack and Brush Them With the Lime-Honey-Tequila Sauce. |

Broil the Potatoes Until They Brown on One Side, Flip Them and When They Brown on the Second Side, They're Done. |

Note: a Second Option Is to Grill the Brushed Potatoes on a Gas or Charcoal Grill. |
