I normally don’t like to eat fried foods because of the free radical damage that happens when the body tries to use oil that has been heated past it’s flash point (i e , when it starts to smoke) This recipe offers a very brief (and therefore healthier) cooking time I would only use coconut oil to cook these croquettes however, because it holds up best at the high temperature needed for frying Another way of saying that is coconut oil has a very high flash point But if any oil starts to smoke — start over
