Smoked Gouda Cheese Grits

    Great recipe. I made this twice. The second time was the pic. Made the following alterations: used regular (not 5 min grits), first time used five minute and they were lumpy and too gritty, add more liquid - grits call for 4:1 ration of liquid to grits, used 5:1 and they came out creamy and soft. Add the grits slowly with a whisk and then whisk for a minute or so and every so often afterward. These cooked in 15 minutes and we're thick and creamy. I topped it with a spicy shrimp in garlic butter. My mother-in-law doesn't like grits but loved these.
