If you have some sweet and flavorful cherry tomatoes in your garden, these are really great tasting little babies! We ended up with two bushes of cherry tomatoes this year, and hubby and I have been enjoying a handful of these each night with our cocktails. I make a tiny slice on their bottoms and blanch them for 10 seconds. The skins just slide right off. No muss no fuss. But unless you have unbelievable patience, don't try these with store-bought cherry tomatoes, the skins will not slide off and you will curse me forever!

Cut a Small Shallow Slice in Bottom of Each Tomato. Blanch Tomatoes, 5 at a Time, in a Saucepan of Boiling Water For 5-10 Seconds. Immediately Transfer With a Slotted Spoon to an Ice Bath to Stop Cooking.

Drain and Peel, Transferring to a Dish.

Stir Together Vodka, Vinegar, Sugar, and Zest Until Sugar Has Dissolved, Then Pour Over Tomatoes, Gently Tossing to Coat. Marinate, Chilled, 1 Hour. (use a Zip Top Bag.).

Stir Together Salt and Pepper ( or Leave Separate) and Serve With Tomatoes With Toothpicks For Dipping.
