    This was so good!! used canned carrots and skipped the first step b/c I didn't have any fresh ones. I also didn't have ground ginger, so I chopped up one small piece of candied ginger. And I doubled the brown sugar b/c 1 tblsp wasn't enough to sprinkle on 2 layers. Delish! My uber-picky 5 and 3 year olds ate it UP!! I hope you try it!

    Placde 1 Inch Water in Saucepan, Add Carrots. Bring to Boil. Reduce Heat; Cover and Simmer For 7-9 Minutes, or Until Crisp Tender. Drain.

    in Small Bowl, Combine Sugar, Ginger and Nutmeg. in Greased 1 1/2 Quart Baking Dish, Layer Half the Apples and Carrots. Sprinkle With Half the Sugar Mix. Repeat Layers. Dot With Butter.

    Cover and Bake at 350 For 30-40 Minutes, or Until Apples Are Crisp-Tender and Carrots Are Tender.
