1 1/2 lbs fresh salmon fillets 1 inch thickcut into 4 portions
1 tablespoon orange rind finely shredded
1/4 cup orange juice
2 tablespoons olive oil
1 tablespoon fresh tarragon chopped or 1/2 teaspoon dried tarragon
1 teaspoon fresh ginger grated or minced (not from a jar please)
1/2 teaspoon salt
1/4 teaspoon black pepper
orange slice to garnish
