Carrot Bread ? – from Mimi’s Cafe,Carrot bread that is much too delicious to be called bread. If you have eaten at Mimi’s, you know what a treasure this recipe is, if you have not, you will be delighted! The original recipe compliments of Mimi’s Cafe.,We Love this recipe, been making it for years now,I made them as cupcakes. I didn’t add the full amount of sugar, maybe I should have because they could have been a little sweeter. Other than that they were good. No where near as moist as the ones at Mimi’s
