Chili Meatloaf, Quick and easy to make yet SO packed with flavor! Serve with buttery mashed potatoes and crisp green beans., Our go to meatloaf for some time now but finally got around to taking a pic and making some comments. Go for it, not your average banquet or smorgasbord meatloaf. Way beyond that. Followed the recipe, and for us a few minor changes. Panko crumbs; mash the kidney beans, as suggested, 2 cloves of minced garlic when doing the onion/pepper, use a HOT salsa it isn’t scorching but a good nibble, and add a thin layer of salsa to the top before the cheddar for the last 10 minutes. Allow to sit for 15 minutes or so while you finish the smashed potatoes, and simmer the BBQ sauce to dizzle over both Finger Lickin Good BBQ Sauce 10923. Make it easier with a self draining loaf pan, greased or sprayed. Loaf don’t get any better than this! Thanks M&Mers!
