3/4 cup sugar
2 teaspoons vanilla
1/2 teaspoon almond extract
2 eggs
1 3/4 cups flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup dried cranberries
1 1/2 cups pistachios, shelled

Cranberry Pistachio Biscotti

    Doubled this the recipe for gift giving. Used melted butter instead of olive oil. Added grated rind of 1 orange, 2 Tbls. good quality orange liquor (Like Cointreau) and 2 Tbls. Amaretto. Omitted vanilla and almond extract. Added more cranberries (another 1/2 cup to the doubled recipe. Used 1 cup finely chopped almonds for part of the pistachios. (remember I doubled the recipe!) In the past I have used Frangelica for the liqueur, use dried cherries instead of cranberries, used pecans, walnuts, or hazelnuts instead of pistachios - they are equally good. I have been using a similar recipe for years and could not find this year. This worked equally well. Biscotti are a great present and yours will be better than storebought. I make other flavors like chocolate and blueberry lemon. These are my personal favorite.

    Preheat the Oven to 300 Degrees.

    in a Large Bowl, Mix Togeather Oil and Sugar Until Well Blended. Mix in the Extracts Then Beat in Eggs. Combine Flour, Salt, and Baking Powder, Gradually Stir Into Egg Mixture. Mix in Cranberries and Nuts by Hand.

    Divide Dough in Half. Form 2 Logs (12x2) on a Cookie Sheet That Has Been Lined With Parchment Paper or Other Non-Stick Covering. Dough May Be Sticky, Wet Hands With Water Slightly to All Easier Handling.

    Bake For 35 Minutes in Teh Preheated Oven, or Until Logs Are Light Brown. Remove from Oven and Set Aside to Cool For 10 Minutes. Reduce Oven Heat to 275.

    Cut Logs in the Diagonal Into 3/4" Thick Slices. Lay on Sides on Cookie Sheet and Bake For Approximately 8-10 Minutes or Until Dry. Cool and Store in Airtight Container.
