1 (10 ounce) package frozen chopped spinach, cooked and well drained
1/2 cup shredded mozzarella cheese
2/3 cup whipped cream cheese
1 1/2 tablespoons grated parmesan cheese
2 tablespoons finely chopped onions
1/2 teaspoon garlic powder
24 slices deli turkey (i like to use peppered turkey)

    These were just lovely ! used deli honey ham, as that's what I had on hand, and onion powder more due to lack of time, will definitely go for fresh onion and garlic next time but still a really tasty appetizer. I found it easier to actually ball the filling and wrap the meat around before putting in the muffin pan cups, then I just pressed it down to fill the cup nicely. The filling was so good I had a hard time not nibbling as I prepared the recipe! It wasn't a hit with my boys, but that's ok, more for mum then ;). Thanks so much for posting this nice, budget friendly appetizer Chef Buggsy Mate, I will definitely be making it next time I have guests for dinner! Made and enjoyed for PAC Spring 2011 :)

    Preheat Oven to 350 Degrees.

    in a Small Bowl Mix All Ingredients Except the Deli Turkey Until Well Blended.

    Place One Slice of Turkey in Each of 24 Miniature Muffin Pan Cups. You Want It to Stick Up a Little Ways Above the Top of the Pan -- If the Slices Stick Up to Far You Can Snip Them With a Pair of Kitchen Scissors.

    Fill Each Turkey Cup With 1-1/2 Teaspoons of the Spinach Mixture.

    Bake 15 Minutes or Until Filling Is Heated Through and the Turkey Edges Begin to Crisp.
