    Cuisine:

Takes a lot of time and the result was less than satisfactory. Didnt set well so ended up being a bit dry and falling apart. Flavors modest and a bit boring, lacking crispness.

Curried Lentil Loaf,This “meatless” loaf is packed full of protein. And, as an added bonus, it has potato and veggies baked right in. This goes nicely with a fresh green salad and some basmati rice. This is yet another recipe from my favorite cookbook, “The Vegetarian Meat and Potatoes Cookbook”,Takes a lot of time and the result was less than satisfactory. Didnt set well so ended up being a bit dry and falling apart. Flavors modest and a bit boring, lacking crispness.,Thank you for this recipe! I tweaked it a bit… didn’t add peanut butter or tomato paste or breadcrumbs, instead I added 1 egg, almost 2 Tbs of ketchup, oatmeal (for the breadcrumbs) and fresh chopped cilantro. It was yummy!
