    Date Filled Oatmeal Cookies,This makes a huge batch, cut the recipe in half if desired. These cookies are best if they sit for a couple of days to soften. They freeze well also. From Company’s Coming Cookie cookbook.,Since I’m a GF girl, I switched this out with my GF Allpurpose flour. Works well any of your favorite none runny fillings work or just plain buttercream icing,My Mom’s recipe is half the size. When I had my recipe site, I suggested substituting cranberries for the dates for less sweetness, and adding some orange rind. I’ve also cooked the dates in orange juice instead of water and added juice from a third of a lime, and some vanilla–although Scotch whiskey would be appropriate. It would save time to cut rectangles with a pizza wheel rather than the traditional rounds.
