Adjust Servings:
1 1/2 cups cooked edamame (or ready-to-eat refrigerated)
2 small ripe avocados, peeled and pitted
2 dashes dried chipotle powder (optional)
1 jalapeno
1/3 bunch cilantro
1/4 cup onion, roughly chopped
2 - 3 limes or 2 -3 lemons, juice only
2 - 3 tablespoons water (optional)
sea salt
fresh ground pepper

    Put Edamame, Avocado, Chipotle, Cilantro, Onion and Juice in a Food Processor and Pulse Until Almost Smooth. Add Enough Water or Extra Juice to Make a Creamy Consistency and Pulse Again. Transfer to a Bowl, Season With Salt and Pepper. Serve With Pita Chips, Tortilla Chips, Carrots, Celery. This Also Makes a Good Sandwich Spread.
