Frito Corn Salad

    I am a volunteer to provide food for funeral luncheons in our parish. I have made this twice now and shared the recipe a number of times. I did change the recipe slightly and replaced the green pepper with a yellow one and have used a Mexican or Taco cheese mix for the cheese ingredient. This is a "go to" recipe for me to take to any potluck that will be serving a number of people.

    Frito Corn Salad,I tried this at a Christmas brunch the quilt guild had. I had to hunt down the one who brought this in and get the recipe.,I am a volunteer to provide food for funeral luncheons in our parish. I have made this twice now and shared the recipe a number of times. I did change the recipe slightly and replaced the green pepper with a yellow one and have used a Mexican or Taco cheese mix for the cheese ingredient.
