    Light Frittata, Nice hot or cold served with a salad. A great way to get the kids to eat an assortment of vegetables. I substituted some of the veggies for tomatoes and baby spinach and I also added 98% fat free bacon upon husband’s request YUM, YUM, YUM. Love this recipe!!, This is so versatile and great tasting! used what I had – lowfat Mexican cheese, vadalia onion, dill and oregano herbs and Bisquick instead of self-rising flour. used about 1/4 cup parmesan cheese on the top. It needed 35 minutes at 350 to be done in my oven. I didn’t have ham so made it vegetarian kind of and served grilled sausage with it and some fresh fruit.
