1 -2 cup chopped fresh spinach

2 teaspoons pecorino romano cheese or 2 teaspoons any hard Italian cheese
1 teaspoon onion, finely chopped
1 -2 teaspoon garlic, minced
1 teaspoon mixed Italian herbs
2 teaspoons sour cream
1 garlic clove
1 -2 tablespoon olive oil
1⁄2 lb ground beef (could also use turkey, pork, veal, or mixture)
