    Nigerian Coconut Shrimp Rice, Don’t have two coconuts? Use a can of coconut milk with water to make 2-1/2 cups , I added a ripe banana and it was wonderful , I started out making the dish per the recipe but I felt it was lacking something so I played around adding some Lowry’s seasoned salt, Delallo’s simply pesto sun-dried tomato basil & cheese and some garlic powder When I make it next time I will probably add some fresh garlic in with the rice when I cook it used the canned coconut milk because I didn’t have fresh coconut on hand 🙂
